Got a craving for all things sweet but want to satisfy it the healthy way? Try this deliciously simple strawberry banana smoothie bowl!
Yesterday I was driving around and saw a huge paddock full of cows and it brought back a memory I thought I’d share with you guys. When I was about 6 or 7 the kids in my street used to tease me by calling me “Cassie the Cow”. I did not find it endearing and it broke my little heart all the time as any unwarranted insults when you are little do. Flash forward a year and the author Frank Moffatt came to my school and signed one of his books for me. When I opened it up I discovered he’d scribbled a quick picture of a cow and affectionately named it “Cassie the Cow”. I convinced myself that he somehow just knew that that’s what the kids called me and it took me a long while to read one of his books after that! LOL.
What does this have to do with a strawberry banana smoothie bowl? Very little. But I’m a firm believer that you should be able to laugh at yourself. And that’s exactly what I did when that memory popped into my head. I’m sure I’ve been called a lot worse since, and have been completely unfazed by it! Just don’t call me Cassie the Cow! 😛
Now, who’s ready for a super simple yet extremely delicious AND healthy smoothie bowl?
I’ve mentioned before that I have more of a savoury tooth, but there are days where I crave all things sweet. Sometimes I satisfy these cravings by reaching for the chocolate (more like driving in my pyjamas to go buy chocolate) but most times I try to satisfy the cravings by eating something like this smoothie bowl. It has the consistency of soft serve ice-cream, and tastes so creamy and sweet you might just trick yourself into thinking it is.
The bowl consists of only three ingredients but you can top it whatever you like. It’s not necessary to add fruit on top given most the bowl is fruit but I like to throw in some cut up strawberry or banana to bulk it up, as well as some chia seeds and shredded coconut. - 100g frozen strawberries
- 100g frozen banana slices (approx. 1 medium banana)
- ⅔ cup milk of your choice (I use almond)
- Fresh strawberries, sliced
- Sliced banana
- 1 tbsp. chia seeds
- 1 tbsp. desiccated or shredded coconut
- Coconut flakes
- Place strawberries and banana into blender and blend on low until combined
- Add milk into blender and blend on high until you achieve a soft serve consistency. This can take about 1 minute, and you may need to scrape down the sides regularly. Also feel free to add some more milk if the consistency is too thick
- Pour into a bowl and add your favourite toppings
- Serve immediately and enjoy
