Welcome to the last edition of What’s On My Plate Wednesday… for now. I’m thinking maybe I’ll run the series once a year and use it as an experiment to watch how much my diet evolves over the years. But for now, I’ll say goodbye to photographing every morsel I put in my mouth on a Wednesday. It’s been fun, and it’s actually hilarious how hungry I get I look back at my previous posts. I get jealous of myself for getting to eat whatever deliciousness is in the photos.
I am really glad I picked Wednesday’s to do this if only for the fact that yesterday I had a terrible day of food that involved Baskin & Robbins, french fries and chocolate. Sometimes you just gotta live and I did a whole lot of living yesterday. And yes, I got chocolate chip cookie dough for B&R because I’m no fool.
It’s safe to say that today was better but given that I was doing a lot of food photography my portions left a lot to be desired. Looks like I’m ending this series with a bang. I made up a big batch of Banana Maple Steel Cut Oats on Monday night to eat throughout the week and as usual I’m so glad I did. Now I have a What’s On My Plate pro tip for anyone who has tried or is going to try these oats and that is to toast the oats in a tablespoon on butter in the saucepan on medium heat for about 5 minutes before you cook them. Once they are toasted, add your 3 cups of water and continue the recipe as is. I’ll get around to updating it shortly but it makes them so much creamier and delicious.
Today I was photographing my brand new No Bake Apricot Coconut Energy Bites and I really wanted to eat one but I had to settle for a couple of dried apricots instead.
I was recipe testing for sweet potato nachos and oh my gosh these are absolutely delicious! By the time they came out of the oven they didn’t really look photo worthy and I couldn’t waste the deliciousness so I ate two serves. Whoops. This should be up in the next few weeks and I can’t wait to share it with you!
I also photographed by beloved Banana Chia Smoothie (alright Adam made it up but I’m gonna claim it since I make it all the time) and so naturally I had to have some for afternoon tea. So yum and sweet relief having something other than water and black tea as per my challenge this week!
As usual dinner consisted of a veggie plate but this time I added some salami. I could definitely eat this every night and not get sick of it!!
Not pictured as I’m yet to eat it but I’m definitely having 2 rows of M&M plain chocolate block. Has anyone tried this yet? It is delicious! Milk chocolate with m&m minis scattered through it. Perfect treat and today after all that work I deserved it. At least that’s what I’m telling myself 🙂
