Happy hump day everyone! How’s your week going? I hope you have been drinking heaps of water for our challenge this week! This will be my second last What’s On My Plate Wednesday for now. The series was never intended to go on forever, but just give you guys a little peek into what I eat on a normal day. I hope you’ve enjoyed reading it as much as I’ve enjoyed sharing it. If anything, this series has shown me that I regularly eat the same thing on Wednesdays. And that I manage to fill my day with a surprising number of vegetables. Oh, and even if I’m living a healthy lifestyle, I ALWAYS have to have my carbs!
Now here’s What’s On My Plate this Wednesday:
You guys, how could I not have a bowl of my banana maple steel cut oats??? They are delicious and nutritious and they fill me up for hours. You should definitely give these a try if you haven’t already! Extra tip – use super ripe bananas to mix in for more flavour!
I promise I didn’t just hit copy and paste on last week! There is different stuff coming, trust me. But yes I did have vita-weats with butter and vegemite for morning tea. I eat the same things sometimes. Sue me!
I made up a pot of my roasted pumpkin soup today for the first time in months! It was a really cold, miserable day here and a warm bowl of this made me so happy. Of course I had to have it with a crusty multigrain bread roll because I’m not silly.
I am experimenting with a recipe for apricot, coconut and chia energy bites right now and these were from my latest batch. Absolutely delicious and I can’t wait to share the recipe with you guys. Stay tuned.
Oh look, it’s another veggie plate! Tonight I had green beans, carrot, celery, grape tomatoes, cucumber, olives, cheese, persian feta and hummus. So good. If you aren’t embracing veggie plates for dinner you are really missing out. Light and easy and tasty and ready in 10 minutes, or less if you are smart and prep for the week in one go!
