Happy New Year friends! We rang in the New Year standing next to Niagara Falls in -15C! It was beautiful, but oh so cold! And if I’m being entirely honest we’ve spent much of the first day of 2018 sleeping off the night that was. But that’s ok – there’s still 364 days left of this year to kick butt and that is exactly what I plan to do!
We’ve been in North America for three weeks now and whilst I’ve had an absolute blast seeing and experiencing new things, I’m SO OVER eating out all the time. It is my one pet peeve about travelling. That, and the fact that very few places I find in North America serve a decent salad! I’ve definitely indulged a lot more on this trip, but it has been 100% guilt-free. Life is for the living after all, and I wasn’t going to give up trying a BeaverTail in Canada that’s for sure. Or the In-N-Out Burger I’ll be enjoying in LA in 2 days! Now that’s a burger worth indulging on!
Even in the blistering cold we’ve found it easy to move our bodies every day as most hotels we’ve stayed at have had a decent gym! I’ve actually been surprised at how well equipped some have been – usually you get 2 treadmills and a couple of dumbbells and that’s it! Continuing to exercise is one of the most important things to me when travelling. Even if it’s just walking around the city I’m visiting, it not only helps maintain my fitness but also is great for my head!

We are now on the final countdown and this time next week I’ll be back in my kitchen! And when I thinking about what meal I should whip up first, this healthy zucchini slice sprang to mind immediately! So I knew I had to share it with you guys today.
This slice right here is seriously so perfect for meal prep. All you need is 10 minutes hands-on time and you’ve got yourself 9 meals that you can enjoy for breakfast, lunch or dinner! Or even just a snack. Yep, you heard right – zucchini slice fits the bill for any meal of the day! This is also a great base recipe if you want to add in more veggies or even some bacon or ham! So feel free to play around and team up some different flavours! Or just stick with this classic – it never disappoints!
A healthy zucchini slice that can be enjoyed as a light lunch, snack or breakfast on the go.
- 4 Zucchinis Grated
- 1 cup Wholemeal Flour
- 1 cup Cheese I used Lactose Free
- 1 Brown Onion Finely diced
- 1/4 cup Olive Oil
- 1 tsp Baking Powder
- 5 Eggs
Preheat oven to 180C / 360F and line baking tray (6x12inches / 15x30cm) with baking paper
Whisk eggs in a large mixing bowl. Add flour and baking powder and mix until smooth.
Add grated zucchini, onion, cheese, olive oil and eggs and mix together until well combined
Pour mixture into tray and place in oven for 30 minutes or until fully cooked through and slightly browned on top
Serve on it's own or with some hummus on top!
- Lay grated zucchini out on paper towel and pat over before adding to mixture to remove excess moisture. No need to go too crazy here!
- I’ve made this recipe with gluten free plain flour and red onion and it tasted just as delicious – so if you need it GF or don’t have a brown onion, don’t fret!
- You could use this as a base for extra add-in’s, like bacon bits (cook in a frypan first before adding in), grated carrot, sweet potato etc.
