This rainbow balsamic salad isn’t so much a recipe as it is a simple recommendation for a healthy salad you can enjoy on high rotation.
I used to make a simple garden salad to go with our steak, chops, chicken etc and I would get so bored that I’d swear off salad and eat exclusively vegetables for at least a few months. That was until I put together this rainbow balsamic salad which is now such a staple in our house that I can balance out salad and vegetables evenly – phew! I could tell you were all worried I wasn’t getting enough nutrients 🙂
Did you see the news the other day about how we are now supposed to be eating 10 portions of fruit and vegetables a day to prevent chronic disease and premature death? It seems like every other day there is a new recommendation. I don’t know about you but my head swims sometimes with the amount of conflicting and confusing information that comes out about what we should be eating!
I like Michael Pollan’s philosophy best – Eat food. Not too much. Mostly Plants. Simple!
Ultimately whether it is recommended we eat 2, 5, 10 or 1000 fruit and vegetable serves a day, we all know we should at the very least be boosting our diet with as many veggies as possible and this salad is a sure-fire way to get your daily doses up.
I use this as a side salad alongside my spaghetti bolognese or whatever protein we happen to be eating at the time. And ok if I’m being super honest I also pair my salad with my sweet potato wedges at least once a week because it makes me feel like I’m being really healthy but also still having a treat. I’ve also added chicken breast with BBQ seasoning directly into the salad to make it into a main meal of its own.
Turns out you can make friends with salad and this rainbow balsamic salad is a really good friend to have!
Rainbow Balsamic Salad
- Mixed lettuce leaf I buy a 4 leaf salad mix from my local supermarket
- Cherry tomatoes halved or quartered
- Red capsicum diced
- Avocado diced
- Cucumber sliced and halved
- Grated beetroot
- Grated carrot
- Shallots / Spring Onions
- Balsamic Vinegar to taste
- Salt to taste
- Pepper to taste
- Mix everything together and eat! It really is that simple.
